A naturally crafted Chenin Blanc made from old vine fruit, fermented with wild yeast found on the grapes themselves. Aged on lees for up to six months, this wine develops slowly and naturally, resulting in a beautifully balanced and harmonious profile.

Production

The grapes for the False Bay Slow Chenin Blanc come from old bush vines in the Coastal Region. These old vines are crucial for producing standout Chenin Blanc, with low yields and great acidity, even though the area is warmer than places like Stellenbosch. Unlike cooler regions, the Swartland’s old vines thrive without the need for coastal Atlantic winds. 

This wine is crafted by Nadia Langenegger, the talented young Cellarmaster at Waterkloof. The grapes are hand-harvested and spontaneously fermented with wild yeast in stainless steel tanks. After fermentation, the wine spends at least ten months on lees before bottling, with only sulphur added for preservation. It is grown, made, and bottled in South Africa, vegan-friendly, and sustainably farmed.

Tasting Notes

This wine offers aromas of ripe citrus and green plum, accompanied by subtle bready notes and hints of dried herbs like fennel and aniseed. The palate is filled with zesty fruit and a creamy lemon character, balanced by crisp acidity. The finish is long and complex, with great texture, thanks to the slow, wild yeast fermentation process.

Food Pairing

This versatile wine pairs wonderfully with lobster and other seafood, risotto, or herb-roast chicken. It also complements spicy dishes beautifully.
